Pan Pacific Orchard Welcomes Hospitality Veteran Antoine Capelli as Director of Food & Beverage
Singapore, [9 December 2025] –
Pan Pacific Orchard, Singapore is pleased to announce the appointment of Antoine Capelli as Director of Food & Beverage, effective 24 November 2025. As a member of the Executive Committee, Antoine reports directly to the General Manager and will lead all Food & Beverage service operations across the hotel’s award-winning dining and lifestyle venues.
With over two decades of international experience, Antoine brings a rare combination of luxury hotel expertise, restaurant leadership, and operational acumen shaped across Europe and Asia. His career began in Switzerland, where he managed his family’s restaurant before embarking on a global journey that has taken him through China, Singapore, and beyond.
In Singapore, Antoine has built a strong reputation in both independent dining groups and luxury hotels. He has held senior positions at Marina Bay Sands (Daniel Boulud’s db Bistro & Oyster Bar), Raffles Hotel Singapore, The Lo & Behold Group, and InterContinental Singapore Robertson Quay, where he most recently served as Director of Food & Beverage. Prior to joining Pan Pacific Orchard, he led the Food & Beverage division at Mama Shelter.
Antoine’s earlier career includes leadership roles at Michelin-starred and award-winning establishments such as béni Singapore, as well as pre-opening and re-opening projects at Raffles Hotel Singapore. During his time at Raffles, he worked closely with celebrated chefs including Alain Ducasse and Anne-Sophie Pic, further deepening his expertise in shaping culinary experiences alongside some of the world’s most influential gastronomic figures. This experience working with celebrity chefs remains a defining highlight of his career.
His foundations were shaped across Switzerland, Belgium, Germany, and China, where he held both kitchen and front-of-house roles, giving him a comprehensive, end-to-end understanding of the guest experience.

At Pan Pacific Orchard, Antoine will oversee the next phase of growth for the hotel’s diverse food and beverage portfolio. This includes the Mediterranean restaurant Mosella and Pacific Breeze at the Forest Terrace, offering a selection of local favourites and international classics, the resort-like Aqua Bar at the Beach Terrace, Florette at the Garden Terrace, in-room dining, the Chairman’s Lounge for refined private dining, banquets, and the Claymore Ballroom, Orchard’s highest pillarless ballroom. He will also play a key role in accelerating the hotel’s culinary programming and driving the continual refinement of its service excellence.
Pan Pacific Orchard has been widely recognised for its innovative architecture and hospitality experience.
